Default priority cannot be changed

How come EPIM can set a default "category" for all new tasks, but not a default "priority" for all new tasks?

Yes, I know that the priority can be set AFTER creating any new new task. That is not my question.

My question is why is the user not allowed to choose his own preferred default. I think it would save time, since most of my new tasks would be of "urgent" priority; not of "none."
I'm using a Galaxy A54 5G w Android 14, AND separately I'm also using a Galaxy S10+ SM-G975U1 with Android 12.0 w system-wide dark theme and a system-wide dark theme.
