It seems to take about 1-2 minutes for sync with iOS (16.3.1) to actually begin.
I've tried to do other things on the phone while I wait for synch, however, it seems to stop the sync process when I leave the window.
Is there any way to have EPIM continue syncing on iOS while in the background?

There's currently no way, unfortunately. If you could forward us the sync log file, we'd check what's causing such a delay.
Android version of EssentialPIM. Keep all your data in sync!
